Mediterranean Chickpea Salad (Print Version)

# Ingredients:

01 - 2 tablespoons extra-virgin olive oil.
02 - 2 tablespoons fresh lemon juice.
03 - 1 garlic clove, grated.
04 - 1 teaspoon Dijon mustard.
05 - 1 teaspoon sea salt.
06 - Freshly ground black pepper.
07 - 3 cups cooked chickpeas, drained and rinsed.
08 - 2 cups mixed yellow and red grape tomatoes, halved.
09 - 1/2 English cucumber, diced.
10 - 1/2 cup pickled red onions.
11 - 1/2 cup kalamata olives, pitted and halved.
12 - 1/2 cup chopped fresh parsley.
13 - 1/4 cup chopped fresh dill.
14 - 1/4 cup chopped fresh mint, plus more for garnish.

# Instructions:

01 - Whisk together olive oil, lemon juice, garlic, mustard, salt, and pepper in large bowl.
02 - Add chickpeas, tomatoes, cucumber, pickled onions, and olives. Toss to coat with dressing.
03 - Add parsley, dill, and mint, toss again. Season to taste and garnish with mint leaves.
