Melt-In-Your-Mouth Eggnog Cookies (Print Version)

# Ingredients:

01 - 2 cups (283g) all-purpose flour.
02 - 2 teaspoons baking powder.
03 - 1/2 teaspoon salt.
04 - 1/2 teaspoon ground nutmeg, plus more for topping.
05 - 1/2 teaspoon ground cinnamon.
06 - 3/4 cup (170g) unsalted butter, room temperature.
07 - 1/2 cup (100g) granulated sugar.
08 - 1/2 cup (100g) packed light brown sugar.
09 - 2 large egg yolks.
10 - 1 teaspoon vanilla extract.
11 - 1/2 teaspoon rum extract.
12 - 1/2 cup eggnog.
13 - 1/2 cup (113g) butter for frosting.
14 - 3-5 tablespoons eggnog for frosting.
15 - 1/2 teaspoon rum extract for frosting.
16 - 3 cups (360g) powdered sugar for frosting.

# Instructions:

01 - Preheat oven to 350°F. Whisk together flour, baking powder, salt, nutmeg and cinnamon.
02 - Cream butter and sugars until fluffy. Mix in egg yolks, extracts, and eggnog. Slowly add dry ingredients.
03 - Drop heaping tablespoonfuls onto lined baking sheets. Bake 11-13 minutes.
04 - Let rest on baking sheet, then transfer to wire rack to cool completely.
05 - Whip butter until fluffy. Add extracts, eggnog and powdered sugar to desired consistency.
06 - Frost cooled cookies and sprinkle with nutmeg.

# Notes:

01 - Use scoop and level method for flour.
02 - Don't use low-fat eggnog.
03 - Can add extra flour for thicker cookies.
