Microwave cream cheese in a large microwave-safe bowl for 10 seconds. Whisk with sugar and mint extract until it achieves a frosting-like consistency, about 60 seconds.

Gradually incorporate heavy cream, milk, and optional food coloring, mixing until sugar completely dissolves and mixture is uniform.

Transfer the mixture to a CREAMi™ Pint container. Secure the lid and freeze for 24 hours.

After freezing, remove lid and place pint in outer bowl. Attach Creamerizer™ Paddle to lid, lock onto outer bowl, and secure assembly on motor base. Select ICE CREAM setting.

Create a 1½-inch wide hole down the center of the processed ice cream. Add chocolate chips to the hole and run the MIX-IN program.

Remove from pint and serve immediately with your choice of toppings.
