Mom Crockpot Stuffing (Print Version)

# Ingredients:

01 - 1 cup butter.
02 - 2 cups onion, chopped.
03 - 2 cups celery, chopped.
04 - 1/4 cup fresh parsley.
05 - 16 ounces fresh mushrooms, sliced.
06 - 12 cups stuffing bread cubes.
07 - 1 teaspoon poultry seasoning.
08 - 1 1/2 teaspoons rubbed sage.
09 - 1 1/2 teaspoons salt.
10 - 2 teaspoons fresh thyme.
11 - 1/2 teaspoon black pepper.
12 - 4 cups chicken broth.
13 - 2 large eggs, beaten.

# Instructions:

01 - Melt butter in large skillet. Sauté onion, celery, mushrooms. Add parsley and remove from heat.
02 - Combine bread cubes and seasonings. Toss to combine.
03 - Add vegetable mixture to bread. Pour in broth and beaten eggs. Toss lightly.
04 - Transfer mixture loosely to a slow cooker. Cook on high for 4 hours or low for 8 hours. Remove lid in the last hour. Stir occasionally for crispy edges.

01 - Use fresh mushrooms only.
02 - Fresh herbs recommended.
03 - Don't pack stuffing tightly.
