Mushroom Parmesan Garlic Pasta (Print Version)

# Ingredients:

→ Base

01 - 4 ounces uncooked pasta
02 - 1 tablespoon olive oil
03 - 3 tablespoons butter, divided
04 - 1/2 medium onion, chopped
05 - 8 ounces cremini mushrooms, sliced
06 - 3 cloves garlic, minced
07 - 1/2 teaspoon Dijon mustard

→ Sauce

08 - 1/4 cup chicken or vegetable broth, or white wine
09 - 1/2 teaspoon lemon juice
10 - Zest of 1/2 lemon
11 - 1/2 cup freshly grated parmesan cheese
12 - 2 tablespoons chopped fresh parsley
13 - Salt and pepper to taste

# Instructions:

01 - Boil pasta in salted water until al dente
02 - Cook onions and mushrooms in oil and butter 8-10 minutes until caramelized
03 - Stir in remaining butter, garlic, and Dijon. Cook 1 minute
04 - Add broth and lemon. Simmer 1 minute
05 - Off heat, add cheese, parsley, and pasta water. Toss with pasta

# Notes:

01 - Can be doubled but mushrooms will need longer to sear
02 - Recipe serves 2 as main dish, 4 as side
