Chicken Gnocchi (Print Version)

# Ingredients:

01 - 4 tablespoons butter.
02 - 1 tablespoon olive oil.
03 - 1 cup onion, finely diced.
04 - 1/2 cup celery, finely diced.
05 - 2 garlic cloves, minced.
06 - 1/4 cup all-purpose flour.
07 - 1 quart half-and-half.
08 - 28 ounces chicken broth.
09 - 1/2 teaspoon dried thyme.
10 - 1/2 teaspoon dried parsley.
11 - 1/4 teaspoon nutmeg (optional).
12 - 1 cup carrots, shredded.
13 - 1 cup spinach, chopped.
14 - 1 cup chicken breast, cooked and diced.
15 - 16 ounces gnocchi.

# Instructions:

01 - Melt butter and oil. Cook onion, celery, and garlic until onion is translucent.
02 - Whisk in flour; cook for 1 minute. Add half-and-half, simmer. Add broth and simmer again.
03 - Add seasonings. Stir in vegetables. Add chicken and gnocchi; heat through. Season to taste.

01 - Can use rotisserie chicken.
02 - Adjust thyme to taste.
03 - Cut large gnocchi in half.
04 - Salt to preference.
