Orange Creamsicle Cheesecake (Print Version)

# Ingredients:

01 - 2 cups graham cracker crumbs.
02 - 1/2 cup butter, melted.
03 - 16 ounces cream cheese, room temperature.
04 - 1 cup plus 2 tablespoons granulated sugar.
05 - 1 cup mandarin oranges in light syrup, drained.
06 - 1 teaspoon vanilla extract.
07 - 1 cup whipped cream.
08 - Additional whipped cream.
09 - Extra mandarin oranges.

# Instructions:

01 - Grease 9-inch springform pan well.
02 - Mix graham crumbs and melted butter. Press into pan bottom and sides. Chill crust 45-60 minutes.
03 - Mix in stand mixer or with hand mixer: Cream cheese, Sugar, Oranges, Vanilla. Mix until smooth.
04 - Fold in whipped cream gently.
05 - Pour into chilled crust. Smooth top with spatula. Freeze at least 4 hours.
06 - Let stand in fridge 30 minutes before serving. Garnish with whipped cream and oranges.
07 - Cut with hot knife.

# Notes:

01 - Can use regular cake pan lined with foil or parchment for easy removal.
02 - Keeps frozen up to a month.
03 - Must use room temperature cream cheese for smooth filling.
