Outback Potato Soup (Print Version)

# Ingredients:

01 - 4 large potatoes.
02 - 2 1/2 cups chicken stock.
03 - 1 cup cold water.
04 - 3/4 cup heavy cream.
05 - 1/2 cup butter.
06 - 3/4 cup cheddar cheese.
07 - 1/2 small onion, diced.
08 - 1/8 cup bacon bits.
09 - 1/8 cup green onions.
10 - 1/3 cup all-purpose flour.
11 - 1/2 teaspoon salt.
12 - 1/2 teaspoon black pepper.
13 - Water for boiling potatoes.

# Instructions:

01 - Dice into bite size. Boil until tender. Set aside.
02 - Simmer broth, onions, seasonings. Cook 20 minutes.
03 - Melt butter. Whisk in flour. Cook few minutes.
04 - Add roux to broth. Stir in cream. Simmer 20 minutes. Add potatoes.
05 - Top with cheese. Add bacon bits. Sprinkle green onions.

# Notes:

01 - Can make ahead and reheat slowly.
02 - Pre-cooking potatoes prevents soup from getting too starchy.
03 - Use heavy cream for best texture.
