Pecan Pie Cobbler (Print Version)

# Ingredients:

01 - 1 box refrigerated pie crust.
02 - 1/2 cup butter, melted.
03 - 2 1/2 teaspoons vanilla.
04 - 1 cup sugar.
05 - 2 1/2 cups dark Karo syrup.
06 - 6 eggs, slightly beaten.
07 - 2 cups pecans (chopped or halves).
08 - Butter-flavored cooking spray.

# Instructions:

01 - Heat oven to 350°F.
02 - Grease 13x9 glass dish with butter-flavored cooking spray.
03 - Roll first pie crust to 13x9 rectangle. Repair any tears by pinching.
04 - In a large bowl, mix corn syrup, melted butter, vanilla, sugar, and eggs.
05 - Stir in pecans.
06 - Pour half of the filling into the crust. Unroll the second crust, lay it over the filling, and pour the remaining filling on top.
07 - Bake for 40-50 minutes until set.
08 - Cool before serving.

# Notes:

01 - Easier to serve than traditional pie. Can use light corn syrup but dark gives richer flavor.
02 - Filling should be slightly jiggly when done. Let cool for best results.
