In a large non-stick skillet over medium-high heat, warm the olive oil. Add ground beef and onions; cook until onions are softened and beef is completely browned, about 3 minutes. Drain all excess fat.

Stir in garlic powder, ketchup, mustard, and brown sugar, mixing well to combine. Season with salt and pepper. Fold in the diced dill pickles. Transfer mixture to a bowl, cover to keep warm, and set aside.

Wipe out the skillet and return to medium heat. Spread butter on one side of each bread slice. Place a slice butter-side down in the skillet. Layer with some cheese, a generous portion of the sloppy joe mixture, more cheese, and top with another bread slice (butter-side up).

Cook until the bottom is golden brown, about 1-2 minutes. Carefully flip and gently press down to help the cheese melt. Continue cooking until the other side is browned and cheese has melted completely, another 1-2 minutes. Repeat with remaining ingredients to make 4 sandwiches.
