Dill Pickle Sloppy Joe Grilled (Print Version)

# Ingredients:

→ Sloppy Joe Filling

01 - 2 teaspoons extra-virgin olive oil
02 - 1 pound lean ground beef
03 - 1 small sweet onion, diced
04 - 1/2 teaspoon garlic powder
05 - 1/2 cup ketchup
06 - 2 teaspoons yellow mustard
07 - 2 teaspoons brown sugar
08 - 1/2 teaspoon kosher salt
09 - 1/4 teaspoon black pepper
10 - 1/2 cup diced dill pickle

→ Sandwich Assembly

11 - 8 slices Texas Toast bread (or any thick/sturdy bread)
12 - 2 cups shredded cheddar cheese
13 - Unsalted butter, for grilling

# Instructions:

01 - In a large non-stick skillet over medium-high heat, warm the olive oil. Add ground beef and onions; cook until onions are softened and beef is completely browned, about 3 minutes. Drain all excess fat.
02 - Stir in garlic powder, ketchup, mustard, and brown sugar, mixing well to combine. Season with salt and pepper. Fold in the diced dill pickles. Transfer mixture to a bowl, cover to keep warm, and set aside.
03 - Wipe out the skillet and return to medium heat. Spread butter on one side of each bread slice. Place a slice butter-side down in the skillet. Layer with some cheese, a generous portion of the sloppy joe mixture, more cheese, and top with another bread slice (butter-side up).
04 - Cook until the bottom is golden brown, about 1-2 minutes. Carefully flip and gently press down to help the cheese melt. Continue cooking until the other side is browned and cheese has melted completely, another 1-2 minutes. Repeat with remaining ingredients to make 4 sandwiches.

# Notes:

01 - Serve immediately with potato chips or additional dill pickles on the side for extra crunch.
02 - For less mess when eating, allow sandwiches to rest for 1-2 minutes before cutting.
