French Comfort Soup (Print Version)

# Ingredients:

01 - Unsalted butter (3 tablespoons)
02 - Leeks, white and light green parts (4 large)
03 - Garlic cloves (3, smashed)
04 - Yukon Gold potatoes (2 pounds)
05 - Chicken or vegetable broth (7 cups)
06 - Bay leaves (2)
07 - Fresh thyme sprigs
08 - Heavy cream (1 cup)
09 - Fresh chives for garnish
10 - Salt and pepper to taste

# Instructions:

01 - Clean leeks thoroughly and slice white and light green parts only
02 - Melt butter, cook leeks and garlic until soft and translucent
03 - Add potatoes, broth, bay leaves, and thyme. Simmer until potatoes are tender
04 - Remove herbs and blend until smooth using immersion or regular blender
05 - Stir in cream, heat through, adjust seasoning, and garnish with chives

# Notes:

01 - Can be served hot or chilled as Vichyssoise
02 - Freezes well without cream
03 - Can customize with various toppings
