Red Velvet Cheesecake Bites (Print Version)

# Ingredients:

01 - 1 box red velvet cake mix.
02 - Cake mix required ingredients.
03 - 16 ounces cream cheese, room temperature.
04 - 4 tablespoons butter, room temperature.
05 - 1/2 cup powdered sugar.
06 - 2 cups graham crackers, crushed.
07 - 1 teaspoon vanilla extract.

# Instructions:

01 - Heat oven to 350°F.
02 - Line two 8-inch cake pans.
03 - Make cake following box instructions.
04 - Let cake cool completely.
05 - Crumble cake into sandy texture.
06 - If too moist, spread chunks on baking sheet and dry in oven 5-6 minutes at 350°F.
07 - Mix cream cheese, butter and sugar until fluffy.
08 - Crush graham crackers into powder.
09 - Add crushed crackers and vanilla to cream cheese mix.
10 - Scoop small balls with cookie scoop and roll into smooth balls.
11 - Chill 1 hour.
12 - Roll chilled balls in cake crumbs and shape again if needed.
