Red Velvet Strawberry Cheesecake (Print Version)

# Ingredients:

→ Cake Base

01 - 1 1/2 cups all-purpose flour
02 - 1 cup granulated sugar
03 - 1 teaspoon baking powder
04 - 1 teaspoon baking soda
05 - 1/2 teaspoon salt
06 - 1 tablespoon cocoa powder
07 - 1 cup vegetable oil
08 - 1 cup buttermilk, room temperature
09 - 2 large eggs, room temperature
10 - 2 tablespoons red food coloring
11 - 1 teaspoon vanilla extract
12 - 1 teaspoon white vinegar

→ Cheesecake Filling

13 - 16 oz cream cheese, softened
14 - 1 cup powdered sugar
15 - 1 teaspoon vanilla extract
16 - 1 cup fresh strawberries, pureed
17 - 1 cup heavy whipping cream

→ Topping

18 - Fresh strawberries, halved
19 - Whipped cream

# Instructions:

01 - Preheat oven to 350°F. Grease and line 9-inch springform pan.
02 - Sift together flour, sugar, baking powder, baking soda, salt, and cocoa powder.
03 - Whisk oil, buttermilk, eggs, food coloring, vanilla, and vinegar. Combine with dry ingredients until just mixed.
04 - Pour batter into pan, bake 25-30 minutes until done. Cool completely.
05 - Beat cream cheese, gradually add sugar and vanilla. Stir in strawberry puree. Fold in whipped heavy cream.
06 - Top cooled cake with filling. Chill 4 hours until set. Garnish with strawberries and whipped cream.
