Ricotta Spinach Quiche (Print Version)

# Ingredients:

→ Base

01 - 1 pre-made pie crust (9 inches)

→ Filling

02 - 1 cup ricotta cheese
03 - 2 cups fresh spinach, chopped
04 - 3 large eggs
05 - 1 cup heavy cream
06 - 1/2 cup grated Parmesan cheese
07 - 1/2 cup shredded mozzarella cheese

→ Seasonings

08 - 1/2 teaspoon salt
09 - 1/4 teaspoon black pepper
10 - 1/4 teaspoon nutmeg (optional)
11 - 1 tablespoon olive oil or butter

→ Optional Garnish

12 - Chopped tomatoes
13 - Fresh herbs

# Instructions:

01 - Sauté fresh spinach in oil until wilted, or thaw frozen spinach and drain.
02 - Mix ricotta, eggs, cream, Parmesan, and seasonings. Stir in spinach.
03 - Pour filling into crust, top with mozzarella.
04 - Cook at 375°F for 35-40 minutes until set. Cool 10-15 minutes before slicing.

01 - Can use fresh or frozen spinach
02 - Let cool for better slicing
