Ritz Cookies (Print Version)

# Ingredients:

01 - 1 cup smooth peanut butter (250g).
02 - 1/2 cup powder sugar (60g).
03 - 60 Ritz crackers.
04 - 16 oz chocolate, cut up.
05 - Sprinkles if you want.

# Instructions:

01 - Mix peanut butter and sugar till smooth.
02 - Put 30 crackers on paper-lined pan.
03 - Put 2 spoons peanut butter mix on each cracker.
04 - Top with second cracker. Press gently.
05 - Freeze 15-20 minutes while melting chocolate.
06 - Melt chocolate in bowl (30 seconds, stir, repeat).
07 - Put clean paper on a new pan.
08 - Dip half the cold cookies in chocolate. Tap off extra.
09 - Put on paper. Add sprinkles quick if using.
10 - Do rest of cookies. Chill 45-60 minutes till firm.

# Notes:

01 - Keeps 1 week in box on counter or in fridge.
02 - Can freeze 3 months - put paper between layers.
