Mix peanut butter and sugar till smooth.

Put 30 crackers on paper-lined pan.

Put 2 spoons peanut butter mix on each cracker.

Top with second cracker. Press gently.

Freeze 15-20 minutes while melting chocolate.

Melt chocolate in bowl (30 seconds, stir, repeat).

Put clean paper on a new pan.

Dip half the cold cookies in chocolate. Tap off extra.

Put on paper. Add sprinkles quick if using.

Do rest of cookies. Chill 45-60 minutes till firm.
