Roasted Red Pepper Spinach Mozzarella Stuffed Chicken (Print Version)

# Ingredients:

01 - 4 medium chicken breasts (about 2 lbs).
02 - Salt and pepper to taste.
03 - ¼ cup all-purpose flour.
04 - 2 tablespoons olive oil, divided.
05 - 1 tablespoon butter.
06 - ½ cup jarred roasted red peppers, sliced into strips.
07 - 1½ cups fresh baby spinach.
08 - 3 cloves garlic, minced.
09 - 4 slices fresh mozzarella cheese.

# Instructions:

01 - Cut horizontal slit 2/3 through chicken breasts. Season with salt and pepper, dredge in flour.
02 - Heat 1 tablespoon oil and butter in oven-safe skillet. Sear chicken 2-3 minutes per side until golden. Remove to plate.
03 - Sauté peppers and spinach in remaining oil 3-5 minutes. Add garlic, cook 1 minute more. Season to taste.
04 - Fill chicken with mozzarella and pepper mixture, secure with toothpicks. Bake at 375°F for 20-25 minutes until 165°F internal.
