Scalloped Potatoes (Print Version)

# Ingredients:

01 - 3 pounds Yukon Gold potatoes, sliced 1/8-inch.
02 - 1/2 medium yellow onion, thinly sliced.
03 - 3 tablespoons unsalted butter.
04 - 1/4 cup all-purpose flour.
05 - 2 cups whole milk.
06 - 1 cup vegetable broth.
07 - 4 garlic cloves, grated.
08 - 1 tablespoon fresh thyme leaves.
09 - 2 teaspoons sea salt.
10 - 1/2 teaspoon black pepper.
11 - 1 1/2 cups cheddar cheese, grated.
12 - Butter for greasing pan.

# Instructions:

01 - Grease 9x13 baking dish. Slice potatoes and onions.
02 - Melt butter and add flour. Whisk in milk and broth. Add garlic, thyme, and seasonings. Cook until slightly thickened.
03 - Layer half of the potatoes, onions, sauce, and 1 cup cheese. Repeat layers.
04 - Cover for 30 minutes. Uncover and bake for another 35-40 minutes. Rest for 20 minutes before serving.
