Spicy Shrimp Sushi Bowl (Print Version)

# Ingredients:

→ Shrimp

01 - 1 pound shrimp, cleaned and shells removed
02 - 1/3 cup of mayo
03 - 2 teaspoons of hot sriracha sauce
04 - 2 tablespoons of sweet chili sauce
05 - Juice of half a lime
06 - Tiny pinch of salt

→ Sushi Rice

07 - 2 cups of short-grain sushi rice
08 - 2 cups of water for cooking
09 - 2 teaspoons of sugar
10 - 3 tablespoons of sweet rice wine (mirin)
11 - 3/4 teaspoon salt

→ Assembly

12 - A cup of edamame (shelled)
13 - One avocado, cut into small cubes
14 - One cucumber, sliced thin
15 - One big carrot, finely shredded
16 - Green onion, chopped (half a bunch)
17 - Crunchy onion topping
18 - Some sesame seeds
19 - Crushed peanuts

# Instructions:

01 - Mix mayo, chili sauce, sriracha, lime juice, and a pinch of salt using a whisk. Keep it ready.
02 - Boil shrimp for about a minute till cooked, then drain well. Chop into half-inch pieces and mix with half of the prepared sauce.
03 - Wash your rice till the water stops being cloudy. Cook for 15 minutes, cover and leave to rest for 10 more. Stir in warmed-up mirin mixed with salt and sugar when ready.
04 - Season the edamame with a drizzle of sesame oil and a little salt. Mix cucumber slices with mirin. Cut the carrots into thin sticks and dice up the green onions.
05 - Start with a base layer of rice in a bowl. Add shrimp, avocado slices, veggies, crispy onions, peanuts, sesame seeds, and the leftover sauce.
