Black Eyed Peas & Greens (Print Version)

# Ingredients:

01 - 1 large ham bone with meat still on the bone
02 - 16 ounces dried black eyed peas
03 - 2 - 3 cups chopped collard greens
04 - 3/4 cup wild rice

→ Aromatics & Liquids

05 - 1/2 large sweet onion, diced
06 - 3 cloves garlic, minced
07 - 64 ounces chicken stock
08 - 8 ounces tomato sauce
09 - 1 tablespoon apple cider vinegar

→ Seasonings

10 - 1 teaspoon salt or Creole seasoning
11 - 2 teaspoons garlic powder
12 - 2 teaspoons onion powder
13 - 1/2 teaspoon cayenne pepper
14 - 1/2 teaspoon black pepper

# Instructions:

01 - Pour black eyed peas into a large strainer and run under cold water. Remove any broken or discolored beans and any foreign material.
02 - Add ham bone to slow cooker along with onion, minced garlic, chicken stock, spices, vinegar and tomato sauce. Stir lightly to combine before adding black eyed peas and collard greens.
03 - Cover and cook on High for 2 hours before stirring in the wild rice.
04 - Return the cover and continue cooking on Low for 4 hours.
05 - Carefully remove the ham bone, cut away any meat still clinging to the bone. Return meat to slow cooker, stir, and cook on Low for another 30 minutes to 1 hour. Skim any ham grease from the top before serving.
