S'mores Cheesecake (Print Version)

# Ingredients:

01 - 1 1/2 cups graham cracker crumbs.
02 - 1/2 cup brown sugar.
03 - 1 teaspoon vanilla extract.
04 - 5 tablespoons unsalted butter, melted.
05 - 3/4 cup mini chocolate chips.
06 - 1 cup marshmallows.
07 - 32 ounces cream cheese, softened.
08 - 1/2 cup sour cream.
09 - 2 eggs.
10 - 3/4 cup heavy cream.
11 - 3/4 cup white sugar.
12 - 2 tablespoons cornstarch.
13 - 2 teaspoons vanilla extract.
14 - 10 ounces hot fudge sauce, warmed.
15 - 2 cups marshmallows.

# Instructions:

01 - Heat oven to 325°F.
02 - Grease 9-inch springform pan.
03 - Mix graham crumbs, brown sugar, vanilla, and melted butter.
04 - Press into pan bottom and sides.
05 - Spread chocolate chips and marshmallows over crust.
06 - Beat cream cheese until fluffy, mix in cornstarch and sugar, add eggs one at a time, mix in sour cream, vanilla, and heavy cream.
07 - Pour over crust.
08 - Place in water bath, bake 90-95 minutes.
09 - Turn off oven, open door halfway, rest 10 minutes in oven, rest 10 minutes on counter, loosen edges with knife, cool 1 hour.
10 - Turn on broiler, add warm fudge and marshmallows, broil 30-35 seconds until toasted.
11 - Cool completely, chill 4 hours.

# Notes:

01 - Water bath is essential for texture. Don't test center with knife. Cool in three steps to prevent cracks. Can make 2-3 days ahead, add toppings before serving.
