Soft Gingerbread Cookies (Print Version)

# Ingredients:

01 - 1 cup butter, softened.
02 - 1 cup light brown sugar.
03 - 1 large egg.
04 - 1 cup molasses (not blackstrap).
05 - 1 tablespoon apple cider vinegar.
06 - 2 teaspoons vanilla extract.
07 - 5 cups flour.
08 - 1 teaspoon baking soda.
09 - 1/2 teaspoon salt.
10 - 1 tablespoon ground ginger.
11 - 1 tablespoon ground cinnamon.
12 - 1/2 teaspoon ground allspice.
13 - 1/2 teaspoon ground cloves.
14 - 1/4 teaspoon ground nutmeg.

# Instructions:

01 - Beat butter and sugar, then add egg, molasses, vinegar and vanilla.
02 - Mix flour, spices, baking soda and salt. Add to wet ingredients until combined.
03 - Cover dough and refrigerate at least 3 hours or overnight.
04 - Roll dough 1/4 inch thick on floured surface. Cut into shapes.
05 - Cook at 350°F - 8-10 minutes for medium cookies, 12-14 for large, 6-8 for small.

01 - Don't overmix dough.
02 - Bake same size cookies together.
03 - Keeps 1-2 weeks in airtight container.
