Southern Smothered Chicken (Print Version)

# Ingredients:

01 - 1 pound chicken legs or thighs.
02 - 1 1/2 cups all purpose flour.
03 - 1 teaspoon salt.
04 - 1 teaspoon ground black pepper.
05 - 1 teaspoon celery seed.
06 - 1 tablespoon onion powder.
07 - 1 teaspoon poultry seasoning.
08 - 1 tablespoon garlic powder.
09 - 1 teaspoon smoked paprika.
10 - 1/4 cup vegetable oil.
11 - 2 cups chicken broth.
12 - 1 cup whole milk.
13 - 2 teaspoons minced garlic.
14 - 1 medium onion, chopped.

# Instructions:

01 - Clean chicken thoroughly.
02 - Mix flour with all seasonings in large bowl. Reserve some for gravy.
03 - Coat chicken pieces thoroughly in seasoned flour.
04 - Heat oil in large pan and brown chicken until golden. Remove from pan.
05 - Cook onions 2 minutes, add garlic and cook 1 minute more. Remove from pan.
06 - Add reserved flour to pan drippings, then whisk in broth and milk until smooth.
07 - Return chicken, onions and garlic to pan. Cover and cook 30-35 minutes, turning occasionally.

# Notes:

01 - Don't overcrowd pan when browning.
02 - Use the same seasoned flour for gravy.
03 - Chicken needs to be turned during final cooking.
