# Ingredients:

→ Ramen Base

01 - 2 strips thick-cut bacon, chopped
02 - 6 cloves garlic, finely chopped or grated
03 - 2 medium shallots, finely chopped
04 - 1 inch fresh ginger, thinly sliced
05 - ¾ teaspoon red pepper flakes

06 - 8 cups low sodium chicken broth
07 - ¾ cup coconut milk (or milk of choice)
08 - ¼ cup low sodium soy sauce
09 - ¼ cup white miso paste
10 - 3 tablespoons chili paste (Gochujang recommended)
11 - 1 tablespoon toasted sesame oil

→ Noodles & Vegetables

12 - 4 squares ramen noodles
13 - 4 cups baby spinach, chopped

→ Chicken Katsu

14 - 4 chicken cutlets (or 2 boneless chicken breasts, sliced horizontally)
15 - 1 cup Panko breadcrumbs
16 - 3 tablespoons sesame seeds
17 - Kosher salt to taste

→ Toppings

18 - Soft or hard boiled eggs
19 - Toasted nori sheets
20 - Sesame seeds
21 - Green onions
22 - Chili oil

# Instructions:

01 - Heat a large Dutch oven over medium-high heat. Cook bacon until crisp (about 5 minutes), then add garlic, shallots, ginger, and red pepper flakes. Cook until caramelized, about 3 minutes.
02 - Add broth, milk, and soy sauce to the pot. Whisk in miso and chili paste until well combined. Reduce heat to medium-low and let simmer for 10 minutes.
03 - Mix Panko and sesame seeds in a shallow bowl and season with salt. Firmly press the chicken into the mixture, using your fist to really adhere the crumbs.
04 - Heat oil in a large skillet over medium-high heat. Cook chicken for 3-4 minutes per side until golden brown. Transfer to a cutting board, season with salt, and slice into thin strips.
05 - Add noodles, spinach, and sesame oil to the soup. Let sit for 5 minutes until noodles are tender.
06 - Divide noodles between bowls, ladle hot soup over top, and add sliced chicken katsu. Garnish with eggs, green onions, sesame seeds, and chili oil as desired. Serve piping hot!
