Cook the tortellini according to package instructions. Drain and set aside.

Preheat the oven to 350°F and lightly grease an 8x8 baking dish.

In a sauce pot, heat olive oil over medium heat. Add thinly sliced onions and sauté until softened.

Add minced garlic to the onions and sauté for a couple of minutes until fragrant.

Slowly stir in heavy whipping cream and heat through. Add pumpkin puree, dry jalapeños, crushed red pepper flakes, and salt. Stir until smooth.

Cook the mixture on low heat (do not boil) for a few minutes, then stir in the shredded cheese mix. Stir until the cheese is fully melted and incorporated.

Gently fold the cooked tortellini into the sauce until evenly coated.

Transfer the tortellini and sauce into the prepared baking dish. Sprinkle additional cheese on top.
