Baked Spinach Mushroom Quesadillas (Print Version)

# Ingredients:

→ Vegetables

01 - 2 cups fresh spinach, chopped
02 - 1 cup mushrooms, sliced

→ Base

03 - 4 large flour tortillas
04 - 1 cup shredded cheese

→ Seasonings

05 - 1 tablespoon olive oil
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon onion powder
08 - 1/4 teaspoon dried thyme (optional)
09 - Salt and pepper to taste
10 - Cooking spray or olive oil for brushing

# Instructions:

01 - Sauté mushrooms 5 minutes, add spinach until wilted. Season with spices.
02 - Layer cheese and vegetables on half of each tortilla. Fold over.
03 - Brush with oil, cook at 400°F for 10-12 minutes until golden.

01 - Can use any cheese variety
02 - Serve with salsa or sour cream
