Quick Ravioli Lasagna (Print Version)

# Ingredients:

01 - Unsalted butter (2 tablespoons)
02 - All-purpose flour (2 tablespoons)
03 - Fresh spinach, chopped (3 cups)
04 - Whole milk (2 cups)
05 - Parmesan cheese, grated (3/4 cup)
06 - Ricotta cheese (1 1/2 cups)
07 - Fresh lemon zest (1 teaspoon)
08 - Garlic, minced (1 teaspoon)
09 - Spinach-artichoke ravioli (27 ounces)
10 - Artichoke hearts, chopped (6 ounces)
11 - Nutmeg to taste
12 - Kosher salt to taste
13 - Black pepper to taste

# Instructions:

01 - Heat oven to 375°F. Spray a 9-inch square baking dish with cooking spray
02 - Cook butter and flour until golden. Add spinach until wilted, then stir in milk to make sauce. Season with nutmeg, salt, and pepper
03 - Blend ricotta with lemon zest, garlic, salt and pepper in a bowl
04 - Boil ravioli in salted water until almost done, following package timing
05 - Build layers of sauce, ravioli, ricotta mix, artichokes, and Parmesan. Repeat layers
06 - Cook for 15 minutes until bubbly. Optional: broil briefly for golden top
