Stuffed Zucchini Boats (Print Version)

# Ingredients:

01 - 3 medium zucchini (about 6 oz each).
02 - 2 teaspoons olive oil.
03 - 1 cup mozzarella cheese, shredded.
04 - 2 tablespoons Parmesan cheese, shredded.
05 - 1 pound lean ground beef.
06 - 1 onion, diced.
07 - 1 garlic clove, minced.
08 - 1 red bell pepper, diced.
09 - 1 1/2 cups pasta sauce, divided.
10 - 2 teaspoons Italian seasoning.
11 - 1/4 teaspoon black pepper.

# Instructions:

01 - Heat oven to 400°F.
02 - Cook beef, onion, garlic until done. Drain fat. Add bell pepper, cook 2-3 minutes. Stir in 1 cup pasta sauce. Add seasonings. Simmer 10 minutes.
03 - Cut lengthwise. Scoop centers leaving 1/2-inch shell. Brush with olive oil. Season with salt and pepper.
04 - Place zucchini in baking dish. Fill with meat mixture. Top with remaining sauce.
05 - Bake 15 minutes initially. Add cheeses. Bake 10-15 minutes more.

01 - Can use scooped zucchini in sauce or save for other dishes.
02 - Large zucchini may need longer cooking time.
03 - Can use leftover meat sauce or chili as filling.
04 - Prepare ahead and bake later.
