Sweet Potato Gratin (Print Version)

# Ingredients:

01 - 3 tbsp butter.
02 - 2 large shallots, diced.
03 - 6 garlic cloves, minced.
04 - 1 tbsp fresh thyme.
05 - 1 tbsp fresh rosemary.
06 - 3 tbsp all-purpose flour.
07 - 2 cups whole milk.
08 - 1 cup heavy cream.
09 - 1½ tsp sea salt.
10 - ½ tsp black/white pepper.
11 - ⅛ tsp nutmeg.
12 - 1½ cups parmesan cheese.
13 - 1½ cups gruyere cheese.
14 - 5-6 medium sweet potatoes.
15 - Heavy duty foil.

# Instructions:

01 - Preheat oven to 350°F. Line baking dish with foil.
02 - Melt butter, cook shallots until soft. Add garlic, herbs, cook 30 seconds. Mix in flour, cook 1 minute. Gradually whisk in milk until thickened. Add cream, seasonings, 1 cup each cheese. Keep warm.
03 - Peel and slice 1/8 inch thick. Stack neatly for easy assembly.
04 - Pour half sauce in dish. Layer potato slices in fan pattern. Cover with remaining sauce. Wrap tightly with foil.
05 - Bake 60-75 minutes until tender. Top with remaining cheese. Broil 5-8 minutes until golden. Cool 30 minutes before serving.
