Sweet and Spicy Chicken (Print Version)

# Ingredients:

01 - 1 pound chicken thighs, cut into 1 inch chunks.
02 - ⅓ cup cornstarch.
03 - Oil for frying.
04 - 6 cloves garlic, minced.
05 - 1 tablespoon ginger, minced.
06 - 1 teaspoon red chili flakes.
07 - 3 dried red peppers (optional).
08 - 6 tablespoons rice vinegar.
09 - 6 tablespoons soy sauce.
10 - 1 teaspoon hot sauce.
11 - ½ cup water.
12 - 4 tablespoons brown sugar.
13 - 1 tablespoon cornstarch.

# Instructions:

01 - Toss chicken pieces with cornstarch in large bowl until well coated.
02 - Whisk together rice vinegar, soy sauce, hot sauce, water, brown sugar, and cornstarch in bowl.
03 - Heat oil in large pan and fry chicken until crispy and golden. Remove chicken, save one tablespoon oil.
04 - Cook garlic, ginger, and red pepper flakes in reserved oil on low for 30 seconds until fragrant.
05 - Return chicken to pan, add sauce and stir until thickened, about 30-60 seconds. Serve with rice.
