Tater Tot Breakfast Burritos (Print Version)

# Ingredients:

01 - 2 cups frozen tater tots
02 - 8 links breakfast sausage, casing removed
03 - 8 large eggs, lightly beaten
04 - ⅓ cup half and half
05 - 2 tablespoons olive oil
06 - Kosher salt and freshly ground black pepper

→ Assembly Ingredients

07 - 1 (16-ounce) can refried beans
08 - 8 8-inch flour tortillas
09 - 1 cup shredded cheddar cheese
10 - 1 cup shredded Monterey Jack cheese
11 - 2 Roma tomatoes, diced
12 - ¼ cup chopped fresh cilantro leaves

# Instructions:

01 - Preheat oven to 400°F. Bake tater tots for 20-25 minutes until golden and crispy.
02 - Heat olive oil in skillet over medium-high heat. Cook sausage 3-5 minutes until browned, breaking it apart. Leave 1 tablespoon fat in pan.
03 - In same skillet, cook beaten eggs over medium heat. Add half and half when eggs begin to set. Season with salt and pepper. Cook 3-5 minutes until creamy.
04 - Spread refried beans on each tortilla. Layer with tater tots, sausage, eggs, both cheeses, tomatoes, and cilantro. Fold sides and roll tightly.
05 - Place burritos seam-side down on baking sheet. Bake 12-15 minutes until heated through and cheese melts.

# Notes:

01 - Can be frozen for up to 3 months when wrapped in plastic wrap or foil
02 - To reheat frozen burrito: microwave 1-2 minutes per side, then crisp in skillet or oven if desired
