Tiramisu Cookies (Print Version)

# Ingredients:

01 - Butter (110g).
02 - Granulated sugar (100g).
03 - Dark brown sugar (100g).
04 - Egg (1, 57-60g with shell).
05 - Vanilla extract (1 teaspoon).
06 - All-purpose flour (230g).
07 - Baking powder (1/2 teaspoon).
08 - Baking soda (1/2 teaspoon).
09 - Instant espresso powder (1 tablespoon).
10 - Salt (1/2 teaspoon).
11 - Mascarpone cheese (180g).
12 - Vanilla extract for cream (1 teaspoon).
13 - Confectioners sugar (90g).
14 - Agave or honey (20g).
15 - Heavy cream (120g).
16 - Cocoa powder for dusting (1 tablespoon).

# Instructions:

01 - Melt butter and cool to room temperature in fridge for about 20 minutes.
02 - Whisk melted butter with both sugars for 1 minute. Add egg and vanilla extract, mix until combined.
03 - Combine flour, baking powder, baking soda, espresso powder and salt. Mix into wet ingredients until just combined.
04 - Scoop 11 cookies using 2 tablespoon scoop, roll into balls. Chill for 1 hour.
05 - Bake at 180ºC/355ºF for 10-11 minutes, 6 cookies per tray. Cool 3 minutes on tray then transfer to rack.
06 - Whip mascarpone, vanilla, confectioners sugar, agave and heavy cream until stiff peaks form.
07 - Pipe mascarpone cream on cooled cookies in swirl pattern. Dust with cocoa powder through fine mesh sieve.

# Notes:

01 - Don't let butter bubble when melting to maintain proper liquid ratio.
02 - Cream can be made ahead and refrigerated until assembly.
