Easy Tomato Herb Fritters (Print Version)

# Ingredients:

→ Fresh Produce

01 - Large tomatoes, finely chopped (about 250g), 2
02 - Red onion, finely chopped, 1/2
03 - Large garlic cloves, minced, 2

→ Fresh Herbs & Seasonings

04 - Fresh dill, finely chopped (about 10g), 1/2 bunch
05 - Fresh parsley, finely chopped (about 15g), 1/2 bunch
06 - Lemon zest from 1 lemon
07 - Salt, 1/2 teaspoon or to taste
08 - Black pepper to taste

→ Dry Ingredients

09 - Plain flour, 85g
10 - Baking powder, 1/2 teaspoon

# Instructions:

01 - Finely chop your tomatoes and add them to a large mixing bowl - this will be the base of your fritters.
02 - Add your finely chopped onions, minced garlic, fresh lemon zest, and herbs to the tomatoes. Then mix in the flour, baking powder, salt, and pepper until you've got a nice dough-like consistency.
03 - Cover the bottom of a frying pan with olive oil and heat it over medium heat. Drop generous spoonfuls of your mixture into the hot oil, cooking for a couple minutes until nicely browned, then flip and cook the other side until golden.
