Cut chicken thin, season with salt, pepper.

Heat oil. Cook chicken 2 minutes each side. Set aside.

Cook butter, shallot, garlic, pepper 5 minutes.

Add tomatoes, orzo. Stir 2 minutes.

Add wine, scrape pan bottom.

Mix in mustard, thyme, broth. Let bubble then turn low.

Put chicken back. Cover, cook 15 minutes. Stir sometimes.

Slice chicken.

Mix in cream, cheese, spinach, basil, lemon. Taste for salt.

Top with chicken and fresh basil.
