Creamy Tuscan Chicken Orzo (Print Version)

# Ingredients:

01 - 1 spoon olive oil.
02 - 2 big chicken breasts.
03 - 2 spoons butter.
04 - 1 big shallot, cut small.
05 - 3 garlic cloves, cut small.
06 - 1/2 spoon red pepper.
07 - 1/2 cup sundried tomatoes.
08 - 1 1/2 cups orzo.
09 - 1/2 cup white wine.
10 - 2 spoons Dijon mustard.
11 - 2 spoons fresh thyme.
12 - 3 cups broth.
13 - 1 cup heavy cream.
14 - 3 cups fresh spinach.
15 - 1/2 cup parmesan.
16 - 1/4 cup fresh basil, cut.
17 - 2 spoons lemon juice.

# Instructions:

01 - Cut chicken thin, season with salt, pepper.
02 - Heat oil. Cook chicken 2 minutes each side. Set aside.
03 - Cook butter, shallot, garlic, pepper 5 minutes.
04 - Add tomatoes, orzo. Stir 2 minutes.
05 - Add wine, scrape pan bottom.
06 - Mix in mustard, thyme, broth. Let bubble then turn low.
07 - Put chicken back. Cover, cook 15 minutes. Stir sometimes.
08 - Slice chicken.
09 - Mix in cream, cheese, spinach, basil, lemon. Taste for salt.
10 - Top with chicken and fresh basil.
