Zuppa Toscana (Print Version)

# Ingredients:

01 - 1 pound spicy Italian sausage
02 - 3 cloves garlic, minced
03 - 1 medium white onion, diced
04 - 1.5 pounds Yukon Gold potatoes, diced
05 - 5-6 cups chicken stock
06 - 2-3 cups chopped fresh kale
07 - 1 cup heavy whipping cream
08 - Salt and black pepper to taste
09 - 6 pieces bacon, cooked and crumbled

# Instructions:

01 - Brown sausage, breaking into small pieces. Remove and drain, keeping 1 tablespoon grease.
02 - Saute onions 5 minutes in reserved grease. Add garlic for 1 minute.
03 - Add potatoes, stock and sausage. Simmer 10 minutes until potatoes are tender.
04 - Stir in kale and cream. Simmer 5 more minutes. Season with salt and pepper.
05 - Top with crumbled bacon and serve hot.

# Notes:

01 - Can be made in slow cooker or Instant Pot.
02 - Rinsing sausage reduces grease.
03 - Use spicy sausage for best flavor.
