Chicken Sliders (Print Version)

# Ingredients:

01 - 1 1/2 pounds thin sliced chicken breasts.
02 - Kosher salt, fresh black pepper and garlic powder for seasoning.
03 - 1/2 cup flour.
04 - 1/4 cup cornstarch.
05 - 1 cup buttermilk.
06 - 1 tablespoon hot sauce.
07 - 1 large egg.
08 - 2 cups Panko bread crumbs (or more as needed).
09 - Vegetable or canola oil for frying.
10 - 12 slices mozzarella cheese.
11 - 12 slider rolls.

# Instructions:

01 - Season chicken breasts on both sides with salt, pepper and garlic powder.
02 - Mix flour and cornstarch in one bowl, combine buttermilk, hot sauce and egg in another bowl, and place bread crumbs in a third bowl.
03 - Dredge chicken in flour mixture, then buttermilk mixture, and finally bread crumbs. Press breadcrumbs into chicken for good coating.
04 - Heat oil in skillet over medium heat. Cook chicken 2-3 minutes per side until internal temperature reaches 165 degrees. Work in batches to avoid crowding.
05 - Whisk together bang bang sauce in a small bowl and set aside.
06 - Cut cutlets to fit buns, place on slider rolls, top with mozzarella while warm, and drizzle with bang bang sauce.

# Notes:

01 - Can be kept warm in 325 degree oven for up to an hour.
02 - Bring bang bang sauce to room temperature before serving.
03 - Check doneness by ensuring no pink remains in center of cutlets.
