Mix flour and cornstarch in one bowl, combine buttermilk, hot sauce and egg in another bowl, and place bread crumbs in a third bowl.

Dredge chicken in flour mixture, then buttermilk mixture, and finally bread crumbs. Press breadcrumbs into chicken for good coating.

Heat oil in skillet over medium heat. Cook chicken 2-3 minutes per side until internal temperature reaches 165 degrees. Work in batches to avoid crowding.

Whisk together bang bang sauce in a small bowl and set aside.

Cut cutlets to fit buns, place on slider rolls, top with mozzarella while warm, and drizzle with bang bang sauce.
