Sweet Potatoes (Print Version)

# Ingredients:

01 - 3 sweet potatoes.
02 - 3 tablespoons butter.
03 - 3 tablespoons brown sugar.
04 - 1/3 cup bourbon.
05 - 1 teaspoon ground ginger.
06 - 1 lime.
07 - 1/4 cup pecans.
08 - 2 tablespoons canola oil.
09 - 1/4 cup pomegranate seeds.
10 - 2 teaspoons salt.
11 - 1 teaspoon black pepper.
12 - 2 teaspoons dried parsley.
13 - 1 tablespoon fresh parsley.

# Instructions:

01 - Boil salted water. Cook potatoes for 7 minutes. Season with salt and pepper. Mix in half of the brown sugar.
02 - Heat the remaining sugar with ginger. Add bourbon. Stir in butter until bubbling. Season with salt and pepper. Add lime juice, pecans, and dried parsley.
03 - Heat canola oil. Fry the potatoes until golden on both sides.
04 - Top with sauce. Add pomegranate seeds. Garnish with parsley and lime zest.

# Notes:

01 - Keep heat low for sauce.
02 - Use toasted pecans.
03 - Let potatoes dry before frying.
04 - Can reduce bourbon separately.
