Chicken Queso Soup (Print Version)

# Ingredients:

01 - 2 tablespoons salted butter.
02 - 1 medium onion, finely diced.
03 - 1 carrot, finely diced.
04 - 2 cloves garlic, finely diced.
05 - 3-4 cups chicken broth.
06 - 2 cups pepper jack cheese, shredded.
07 - 2 cups cheddar cheese, shredded.
08 - 8 ounces cream cheese, softened.
09 - 4 ounces diced green chiles.
10 - 2-3 cups cooked shredded chicken.
11 - 1/2 tablespoon chili powder.
12 - 1 teaspoon pepper.
13 - Fresh cilantro for garnish (optional).
14 - Additional grated cheese for garnish (optional).
15 - Tortilla strips for garnish (optional).

# Instructions:

01 - Heat butter in large pot, cook onion and carrot for 10 minutes until soft. Add garlic and cook 1 minute more.
02 - Add broth, then gradually add cubed cream cheese and shredded cheeses, stirring until fully melted.
03 - Stir in green chiles, chicken, chili powder, and pepper. Cook 5 minutes and adjust seasonings.
04 - Add more broth for thinner soup or heavy cream for thicker soup if desired.
05 - Top with cilantro, extra cheese, and tortilla strips if desired.

01 - Best with rotisserie chicken for convenience.
