Creamy Cajun Chicken Soup (Print Version)

# Ingredients:

01 - 1 tablespoon butter or olive oil.
02 - 1 tablespoon garlic.
03 - 1 cup onion, chopped.
04 - 1 cup carrots, chopped.
05 - 1 1/2 cup celery, chopped.
06 - 1 1/2 cup bell pepper, chopped.
07 - 1 1/2 pounds chicken breast.
08 - 2 tablespoons Old Bay or Cajun seasoning.
09 - 2 teaspoons hot sauce.
10 - 1 (14 ounce) can fire roasted tomatoes, drained.
11 - 3 cups chicken broth.
12 - 1/4 cup heavy cream.
13 - 8 ounces cream cheese, softened.

# Instructions:

01 - Heat oil in Dutch oven, cook garlic, onion, celery, bell pepper, and carrots 3-4 minutes until tender.
02 - Add chicken, seasonings, tomatoes, and broth. Simmer covered for 30 minutes.
03 - Remove chicken and shred while adding cream and cream cheese to soup.
04 - Whisk until cream cheese dissolves, return chicken to pot.
05 - Top with green onions, cheddar cheese and hot sauce if desired.
