Fresh Cucumber Dill Yogurt Salad (Print Version)

# Ingredients:

→ Yogurt Dressing

01 - 3/4 cup (150 grams) Greek yogurt or plain full-fat yogurt
02 - 1 1/2 tablespoons extra virgin olive oil
03 - 1 1/2 tablespoons fresh lemon juice
04 - 1/4 teaspoon freshly grated garlic
05 - 1/2 teaspoon fine salt
06 - 1/5 teaspoon freshly ground black pepper

→ Salad

07 - 1 1/2 pounds (670 grams) English cucumbers, about 2 long ones
08 - 1/2 red onion, sliced paper-thin
09 - 1/4 cup fresh dill, finely chopped

# Instructions:

01 - Whisk together your yogurt, olive oil, fresh lemon juice, grated garlic, salt, and pepper in a small bowl until smooth and creamy.
02 - Slice your red onion into delicate thin rings. Cut those cucumbers in half lengthwise, then slice them into thin half-moons about 3mm (1/8 inch) thick.
03 - In a large bowl, toss together your sliced cucumbers, onions, and fresh dill. Pour over that creamy dressing and give everything a good toss until it's all evenly coated.
04 - Enjoy right away at room temperature, or chill it in the fridge until you're ready to serve.
