High Protein Cookie Dough Truffles (Print Version)

# Ingredients:

→ Base Ingredients

01 - 2% cottage cheese, 1 cup
02 - Sugar-free maple syrup (like Lakanto), 2 tablespoons
03 - Pure vanilla extract, 1 teaspoon
04 - Almond flour, 1 1/2 cups (or heat-treated all-purpose flour)

→ Protein & Coating

05 - Vanilla protein powder (or preferred flavor), 1/4 cup
06 - Sugar-free dark chocolate chips (like Lily's), 1 1/2 cups divided
07 - Coconut oil, 1 teaspoon

# Instructions:

01 - Start by blending your cottage cheese in a blender or food processor until completely smooth.
02 - Set aside 1 cup of chocolate chips for coating. In a medium bowl, combine the smooth cottage cheese with all remaining ingredients until well mixed.
03 - Pop the dough in the refrigerator for 30 minutes to firm up.
04 - Line a baking sheet with parchment, then use a cookie scoop to portion and roll the chilled dough into even balls. Place them on the sheet and freeze for at least 20 minutes.
05 - Melt the reserved chocolate chips in 15-second microwave intervals, stirring between each, until smooth. Dip each frozen ball in the melted chocolate and place back on parchment. Refrigerate until the chocolate sets completely.
