Preheat oven to 400°F. Line baking sheet with parchment.

Combine sausage, cheese, breadcrumbs, 1 egg, and thyme.

Whisk remaining egg with 1 tablespoon water.

Roll out pastry sheets and cut each into two long strips.

Place sausage mix down center of strips. Brush one side with mustard, other with egg wash.

Roll pastry around filling, seal with egg wash. Place seam down.

Score tops and cut into 1 1/2 inch rolls.

Brush with egg wash, add seasoning. Bake 18-20 minutes until golden.
