Boursin Chicken (Print Version)

# Ingredients:

01 - Avocado oil (1 tablespoon).
02 - Thin-cut boneless, skinless chicken breasts (4).
03 - Mustard powder (1/2 teaspoon).
04 - Garlic powder (1/2 teaspoon).
05 - Dried oregano (1/2 teaspoon).
06 - Dried parsley (1/2 teaspoon).
07 - Salt (1/2 teaspoon, divided).
08 - Black pepper to taste.
09 - Butter (2 tablespoons).
10 - Shallot, minced (1 small).
11 - Garlic clove, minced (1).
12 - Dry white wine (1/4 cup).
13 - Chicken broth (1 cup).
14 - Boursin cheese, softened (5.2 oz).
15 - Half and half (1/2 cup).
16 - Parmesan cheese, grated (1/3 cup).
17 - Fresh thyme sprigs (2).
18 - Dried parsley (2 teaspoons).

# Instructions:

01 - Season chicken breasts with salt, pepper, mustard powder, garlic powder, oregano, and dried parsley.
02 - Heat oil in large non-stick skillet over medium-high heat. Brown chicken 3-5 minutes per side until cooked through. Transfer to plate.
03 - Melt butter in same skillet. Sauté minced shallots and garlic until translucent, about 3 minutes. Add wine and deglaze pan, scraping up browned bits. Simmer until reduced by half.
04 - Add chicken broth and Boursin cheese. Cook until cheese melts and sauce thickens. Whisk in parmesan, half and half, thyme, and dried parsley. Simmer 5 minutes.
05 - Return chicken to skillet and cook until heated through. Adjust seasoning if needed.

# Notes:

01 - Sauce can be used for steak or fish as well.
02 - Use a dry white wine you'd enjoy drinking.
