Heat half the butter in a large pan over medium-high heat. Cook peppers and onions for 3-4 minutes until soft. Remove and keep warm.

Add remaining butter to pan. Season steak with salt and pepper, then cook 3-4 minutes until browned.

Return vegetables to pan with steak.

Lay out egg roll wrappers. Place half a cheese slice in center of each.

Add 2-3 tablespoons steak mixture to each wrapper. Fold according to package, sealing edges with water.

Heat oil to 350°F in deep pan, about 2-3 inches deep.

Fry 3-4 rolls at a time, turning until golden brown, about 3-5 minutes.

Drain on paper towels. Serve with ranch or preferred dipping sauce.
