Quick Chicken and Gravy (Print Version)

# Ingredients:

01 - 1 tablespoon butter.
02 - 1 tablespoon olive oil.
03 - 1 medium onion, chopped.
04 - 1½ lbs chicken breasts, cut into strips.
05 - ½ teaspoon poultry seasoning.
06 - ½ teaspoon kosher salt.
07 - ¼ teaspoon black pepper.
08 - 3 tablespoons butter.
09 - 3 tablespoons flour.
10 - 1¼ cups chicken broth.
11 - ¾ teaspoon fresh thyme (or ¼ teaspoon dried).
12 - ½ teaspoon black pepper.
13 - ¼ teaspoon kosher salt.
14 - 1-2 tablespoons Greek yogurt.
15 - Hot mashed potatoes.

# Instructions:

01 - Heat butter and oil in large skillet. Cook chopped onion for 5 minutes. Season chicken with seasonings. Brown chicken for 4-5 minutes per side. Remove chicken and onions, keep warm.
02 - Melt butter on medium-low. Whisk in flour and cook for 1 minute. Slowly add broth, whisking until smooth. Add thyme and seasonings. Cook for 2-3 minutes until thickened.
03 - Return chicken to pan. Cover and cook for 3-4 minutes. Remove from heat. Stir in yogurt. Serve over mashed potatoes.
