Rotisserie Chicken Salad Melt (Print Version)

# Ingredients:

01 - 1/4 cup Greek yogurt.
02 - 1/4 cup mayonnaise.
03 - 1/4 cup celery, finely chopped.
04 - 2 teaspoons lemon zest.
05 - 2 teaspoons Dijon mustard.
06 - 1/4 teaspoon ground pepper.
07 - 1/4 teaspoon salt.
08 - 1 cup shredded rotisserie chicken.
09 - 1/4 cup red onion, thinly sliced.
10 - 8 slices whole-wheat bread.
11 - 2 tablespoons unsalted butter, melted.
12 - 1 medium tomato, sliced.
13 - 4 slices American cheese.

# Instructions:

01 - Mix yogurt, mayo, celery, lemon zest, mustard, and seasonings. Fold in chicken and onion.
02 - Brush bread slices with butter on one side. Spread 1/4 cup chicken salad on unbuttered sides. Add tomato slices and cheese. Top with second slice, buttered side up.
03 - Heat skillet over medium-low. Cook covered with smaller lid. Grill 3-4 minutes per side. Keep warm while cooking remaining sandwiches.
